Warm Squash and Apple Salad by Chef Sunshine Flagg from Lupo at the Jeffersonville Fresh Stop Market

Warm Squash and Apple Salad
2 delicata squash, rinsed
2 apples, rinsed
½ tsp. cayenne pepper
2 tsp. olive oil
2 tsp. honey/agave/maple syrup
1/2 head of romaine lettuce
Slice delicata squash in 1/4" rings (leaving the skin on). Core and cut apples in 1/4" slices. Mix together all other ingredients except lemon and lettuce. Toss squash and apples in dressing. Bake for 20 minutes at 325 F. Tear lettuce into bite-size pieces. Toss roasted vegetables and lettuce together and finish with a squeeze of lemon.
