Tikel Gomen: Ethiopian Cabbage Dish
Heat olive oil in a large skillet or Dutch oven over medium high heat. Saute carrots and onion for approximately 5 minutes. Add the garlic and ginger saute for 1 minute. Add salt, pepper, cumin, and turmeric and cook 1 minute. Add the cabbage and potatoes. Stir to combine. Cover the pan and reduce heat to medium-low. Cook until potatoes are soft, approximately 20-30 minutes.
Yields 4-6 servings
